renaissance man

Tonight Sean proclaimed himself a "Renaissance Man". He's good looking, works hard, cooks, AND cleans. All-around stand up guy. *GAG*

But I'll give it to him considering he cooked up this delicious dish for us. For a girl who hates salmon (yes, I know, sorry...), even I liked it!

Salmon with Corn & Avocado Dressing

Dressing:

2 avocados
1 tomato
1 red onion
1 can of yellow corn
1 clove garlic, diced
salt
cumin
red cayenne pepper
cilantro
tablespoon of salsa
lime to taste

Mix all ingredients and chill.

Salmon:

Marinate in olive oil, garlic, mexican seasoning, salt and pepper for 1 hour.
Grill on both sides until pink.

Top the salmon with the dressing as desired.

the adventures of travelling rory

Last weekend Rory and Kasey went on a spontaneous plane ride to visit the Cederberg's in Texas. The grand-pup was dying to meet them! Rory was very confused leaving his bed at 5am and walking through the very loud airport but promptly fell asleep on the airplane....


He wasn't so fond of sitting under the seat, or keeping his head inside his bag. This is how he slept the entire 4-hour plane ride! Luckily he loves being in his carry-bag. He now understands that when he goes in there, he get's to be with mommy and daddy instead of staying at home alone in his crate. Very helpful on a plane!



First thing he noticed when he walked in the door: not the other dog and cat, not the other people he had never met (very unusual seeing as how he has to stop and befriend EVERYBODY), but the toys. ALL the toys. He spent his first few hours running from toy to toy carrying them around like he had hit the jackpot. He was in hog heaven! 


After Rory and Annie realized they could be friends, Rory loved running outside in the grass with her. He quickly figured out that puppies enjoy the grass and it's the perfect place to do your business! So much better than the concrete and stone he is used to at home in New York.




He would have stayed outside and played in the grass all day if we had let him! Don't worry buddy, someday you'll have your own grass to run around in all day long!

After 4 short days, and lots of fun, we flew back home to New York very relaxed. It was a whirlwind but very much enjoyed! Kasey was so happy to see her cousin Jen and meet the new addition to the Cederberg clan, baby Jay! 



Once we got home Rory did NOT like having the suitcase out anymore. He promptly starting pulling all of the clothes out and leaving them all over the apartment. Thanks bud! 

Rory can't wait for his next trip. He knows there are plenty more in his near future!

texas barbecue comes to new york

One morning we got a call from Kasey's dad asking if we had gone to the grocery store yet. "No..... Why?" "Well, I sent you something." Inner thoughts: HUH?

So we waited. And before we knew it our trusty email notification of package delivery popped up! A UPS BOX! WHAT COULD IT BE!?

We tore open that box like inside of it was liquid gold waiting for us to cash in. No liquid gold, but there was brisket! From Salt Lick! Only THE greatest barbecue on the planet. It was marinated and freeze packed, ready to just be heated and served. Our mouths were literally watering just thinking about it. 

Super Bowl Sunday was less than a week away and we both knew that would be the perfect time to enjoy this delicious looking brisket. Sean spent the entire day reading and preparing to cook the brisket, while Kasey spent it working on a photo shoot thinking about how amazing that brisket would taste after the long day. 

It was well worth the wait. Pure heaven. 

We are anxiously planning when we will be ordering another piece of meat from Salt Lick. What a genius idea to be able to ship it anywhere! It is such a great way to have a little piece of home here in New York City, where, let's face it, no one can touch the perfection of Salt Lick.
